Aloo Ke Gutke (Spicy diced potatoes)
The first thing I remember (guess, I was really hungry) in 1984 as I got out from the bus in Almora (my first visit to Kumaon Hills) was a hawker selling “Aloo Ke Gutke”. We used to cook them a lot at home and remember my parent saying “aloo ke gutke in pahar taste even better because of the quality of aloo”. How true they were I realized while tasting them in Almora. You may not have the “Pahari Aloo” but here is the recipe.
Ingredients: Potato Medium Size (peeled) 1 Kg Ginger (strips) 10 Grams (optional: it if you want to extra flavor) Cumin seeds 1/2 Tea spoon Turmeric powder 1 Tea spoon Coriander powder 2 Tea spoon Coriander Leaves (chopped) ¼ bunch Red Chilli powder 1 Tea spoon Whole Red Chillie 4 in number Fat or Oil 3 table spoons Salt To taste
Method: 1. Cut the each potatoes into 4 quarters. 2. Heat oil in pan/ pressure cooker and add whole red chillies, cook for 1 minute. 3. Add cumin seeds and wait for it to crackle. 4. After cumin seeds crackle ginger strips. 5. Add Coriander, Chilli powder, Turmeric power and Salt and cook for 2 minutes. 6. Add potatoes piece. 7. Add half table spoon of water. If cooking in pressure cooker, you can add one tea spoon of vinegar, as this will ensure that potatoes do not break while cooking. 8. If cooking in pan, cook in slow fire till done, if using pressure cooker, cook in low flame for 10 minutes (remove the cooker from the gas before it gives a whistle). 9. Garnish with chopped green coriander, serve hot with mango pickle or mint chutney
