Great tasting Kumaoni Recipes
Churkani (Indian black bean soup)

The Kumaoni version of the black bean soup, that tastes wonderful and is extremely refreshing and
healthy. When I had iT for the first time did not like it too much but now I love it. I do not get in often
these days, only when I am visiting my mother in India or it when she is here in USA.  I am missing it
now, here is the recipe, try it out….

Ingredients:
Bhatt or Black Soya bean                 1 cup
Mustard oil                                     2 tablespoon
Whole wheat flour                           2 tablespoon
Salt                                               to taste

Seasoning (Tempering)
Cumin seeds                                  1/2 teaspoon
Ghee                                             1 to 2 table spoon
Garlic                                             6 cloves
Red dried chilies                              3  numbers
Asafetida (Hing)                              1 pinch
Jumboo Herb(optional: if available)   1 teaspoon

Garnish
Garam Masala                                 ¼ teaspoon
Coriander leaves                             ¼ of a bunch

Method:
1. In a pan (if possible use the iron karhai), pour in mustard oil and heat it properly.
2.When hot, put in the soya beans (“Bhat”) and roast for about five minutes in a low flame till the beans
start crackling.
3.Add the wheat flour to the beans and roast till the flour turns pink.
4.Add about one liter of water and bring it to boil.
5.Add salt and cook in pressure cooker for about fifteen minutes.
6.In a separate pan add 2 tablespoon of pure ghee and heat slightly.
7.Add finely chopped cloves of garlic, cumin seeds, red whole chilies and pinch of asafetida.
8.When the cumin seeds start crackling add the jumbo herb.
9.Pour the above mixture over the cooked beans.
10.Sprinkle the garam masala on the top.
11.Garnish with chopped coriander leaves.

My experience is that it tastes best with white rice.
